PCMark Vantage is based on the hard drive usage of actual applications, albeit applications from the Windows Vista era. Futuremark uses so-called traces, which are recordings of disk activity of real programmes, and repeats the same activity as quickly as possible in the benchmark. Because traces aren't played back in real time but as fast as possible, performance differences are amplified in PCMark Vantage.
Ironically the M5 Pro Xtreme is slower than the M5 Pro here. Almost 71.000 is good, but less than the rest. The M5S also doesn't stand out here.
